I have now been sitting here for ages, trying to come up with something interesting to write before I post the recipe but to no avail. In my desperation I started a thwarted ramble about whether or not life is strange because it deviates from our expectations but consider yourself fortunate – I deleted that. And here I am now without much to say, well yes I do have things to say but I feel a bit polemic today so I better stay off any thread that brings that on as well. I better just get on with my recipe.

I have always considered frittata as one of those culinary life savers you need on days when you stand there in the middle of the kitchen thinking ‘and now what??…’ Frittata is versatile, easy and quick to make. Not to speak about how nutritious it is as well; eggs, cheese and vegetables/meat, fish whatever comes to your mind in one happy meal that even tastes good, isn’t that a gracious gift from Mother Nature? Now this frittata is even better because you don’t need to put bread on the table because I have already added it in the form of bread cubes that you fry in oil and herbs. I added some zucchini but you can take any other vegetable you want though zucchini do taste good in a frittata!
FRITTATA WITH ZUCCHINI, FRIED BREAD AND HERBS
one small frittata, perfect for a solitary lunch
1 slice of rustic bread
finely chopped fresh herbs of your choice
1 zucchini
2 eggs
3 tbsp freshly grated parmesan cheese
salt
pepper
extra-virgin olive oil
Dice the bread and fry in olive oil with the chopped herbs until crunchy in a small skillet or pan. Take out the bread and then slice and fry the zucchini in the olive oil until golden. Put the bread back into the pan and keep it hot.
Whisk eggs, parmesan, salt and pepper in a small bowl and pour on the zucchini and bread. Cook on medium heat until firm enough to be turned around with the help of a lid or a plate. Cook for a minute or two and then serve!

You are right, this meal is a perfect solution to the “what now?” in the kitchen! Simply beautiful.
“And now what” … I been asking myself that several times a day and not just meal times. The frittata is especially perfect for those meals because if you don’t have the zucchini, there most always another veggie lurking around that will fit in it’s place.
Wonderful photos. Adding the words creates new interest, some times it makes it feel like a book & other times it feels like a menu and I enjoy both.

Frittata is indeed a kitchen saver when you run out of ideas or too tired to do anything else. I have made frittata so many times and often with what I have on hand. The latest one I made was with roasted sliced egg plants, sun dried tomatoes, and roasted pine nuts. It was incredible. I would have to try your version with fried bread. The photos are just incredible.
