There must be hundreds of variants of the thin flatbread type around the world, piadina, tortilla well take a look
here and you see that there are lots and lots of flat breads in this varied world.
La piadina is an Italian version of unleavened flat bread that is typical in the Romagna region, it is easy to make if you get the right recipe although I have to confess that I actually bought these ready made because it hot here now and I avoid adding more heat to it if I can.

Anyway, I wanted to make something with sardines because i have shamelessly neglected them of late. I used to love sardines when I was very, very young and I still like them a lot but I tend to forget that they exist. So to change that I bought a few tins and instantly forgot about it but the sardines obviously were swimming somewhere down there in my subconscious because a swarm of bubbles surfaced and made me make this lovely lunch sandwich thing, I don’t know if I can call it a sandwich really but it does fill the same function so here we go.

PIADINA WITH SARDINES, TOMATOES, GOAT’S CHEESE AND SALAD
2 servings
2 piadine or tortillas if you cannot find them
soft goat’s cheese or some other type of soft cheese in case you don’t like it
1 tin of sardines in olive oil
2 medium tomatoes, thinly sliced
small leaved green salad, I used lamb’s ears salad or valeriana as it is called here
sesame seeds
black pepper
salt
Spread the soft goat’s cheese over half of the piadina, then as much salad as you feel like, a layer of sliced tomato and then add pieces of sardine fillets all over it all.
Sprinkle salt, lots of ground black pepper and sesame seeds over it, fold and eat!

I love Piadinas .. had them at an Italian event I went to last year, but also used to have them in a cafe/restaurant I use to go, in the last town I lived in.

Sounds like my problem with sardines. My dad always brought us sardines from his flying trips (air force) from all over the globe so we got to try a great variety. I still love them today but like you I forget them. I’ll have to go scout my pantry for a forgot tin, bet I find one or two.

Beautiful pictures and I love the way you’ve served them. I recently started making flatbreads. I laughed when I saw the wiki link as it’s a page I read a few days ago whilst writing about flatbreads. I’m going to make some La piadina this weekend.
Oh! I like the salad. Never seen or heard of it before. I like the name ‘lamb’s ears’.

I love Sardines. The kids love them too. I have never tried goats cheese with sardines though. Ishay gave me a tin of sardines in a spicy tomato sauce when we were in Weimar and the day after I got home the kids and I ate it on toast for breakfast. Making me hungry right now!
