Sandwich love – Goat’s Cheese Sandwich With Rosemary Marinated Carrots and Green Peas

GOAT’S CHEESE SANDWICH WITH ROSEMARY MARINATED CARROTS AND GREEN PEAS
1 small carrot/sandwich
3-4 fresh green pea or snow pea pods/sandwich
75 g/ 2,6 oz creamy goat’s cheese/sandwich
1 slice of bread/per sandwich (obviously)
fresh rosemary, finely chopped
lemon juice
extra-virgin olive oil
Peel the carrots and cut them into thin strips, the best way to do it is to use a mandoline. Put them in a bowl with the chopped rosemary, a squeeze or two of lemon juice and then drizzle it all with olive oil. Leave to marinate for at least 1 hour.
Steam (or cook in a little water) the green pea pods until soft but still crunchy. Remember to strip away eventual tough strings etc.
Spread the goat’s cheese over the slice of bread, drip off most of the oil from the carrot strips and put them on top of the cheese and then top with the pea pods. Ready to serve – ready to eat!
