CHILI FRIED EGG SLICES AND VEGETABLES

Eggs. I think eggs must have been one of the most prominent foods (yes I know it is wrong!) of my childhood, my mother made pancakes and her own special version of scrambled eggs called mammelette as opposed to omelette. One of the things my oldest daughter remembers of her is that she hardly had the time to put her little foot inside the garden gate that her grandmother had taken out the special pancake skillet that makes small blini sized pancakes and started to make some for her. She somehow always doubted that I actually fed my children so she had to make sure that they got something inside them when they visited her and it was almost always in the form of pancakes. And she was particularly good at making them too, I never had as good ones as the ones she made.

She gave us boiled eggs and fried eggs too but she never gave us fried hard-boiled eggs which is what I am giving you today. My absolute favourite combination of flavours when it comes to eggs is that of chili pepper and egg, it is the best there is and it is just as good if the eggs are fried, boiled or made into a frittata, whatever goes. Here I have fried hard-boiled egg slices with cayenne pepper and then served it on salad and quickly steamed vegetables but you can serve them just the way you feel like!

Chili Fried Eggs



CHILI FRIED EGG SLICES AND VEGETABLES

hard-boiled eggs
zucchini
carrots
salad leaves
cayenne pepper in powder
salt
extra-virgin olive oil

- Cut the eggs in thick slices and fry them in olive oil and cayenne pepper. Sprinkle salt over them.
- Slice or cut the vegetables in thin strips before quickly steaming them for a minute or two so that they soften but still are crunchy.
- Cut the salad in pieces and mix with the vegetables, salt and olive oil.
- Put the eggs on top and serve.

  5. Very interesting! Will give it a try.
    Cayenne pepper and egg is a great combo, I love it. I also like to pair (fried) eggs with smoked paprika. Have you ever tried it? Smoked paprika or pimentón is pretty much used in Spanish cuisine.
    Beautiful photos... Always making me hungry! :)

    My mom made fried egg sandwiches which were just bread-sized individual omelets on white sandwich bread with lots of ketchup. Heaven!
