Thank You so much for all your positive comments and moral support, it has been reinvigorating to read them all and to feel your love and concern! We obviously got the swine flu all of us but kept cool (mentally) and warm (physically) and today it seems as if we are all out of it. The children obviously are much fresher than we oldies are but I hope to regain forces soon because it is so utterly boring to feel this decrepit when there are things to be done because in some strange way, you never fall ill when you have a perfectly clean, tidy and shining home do you? Unless you have it like that all the time obviously which is not the case here. Unfortunately.

But before I start with that, I wanted to post the recipe I promised Friday. You can obviously use any type of rice you want, I like the black Venus rice, riso di Venere, that is often used with fish and sea food but you can really use it for almost everything. I wanted o serve it with something simple but fresh, I made this bell pepper salsa with pink pepper and mint. The pine nuts are there to give sweetness and and a softer texture but if you prefer some other sweet nut you can take that instead.

Red Bell Pepper Salsa With Pink Pepper, Pine Nuts and Mint on Black Venus Rice

RED BELL PEPPER SALSA WITH PINK PEPPER, PINE NUTS AND MINT ON BLACK VENUS RICE
2-3 servings

200 ml/ 0,85 cup Venus rice or some other type of rice
1 large sweet red bell pepper
1 tblsp (or more or less as you like it) pink pepper corns
about 15 mint leaves, finely chopped
2-3 tblsp pine nuts
salt
a little apple cider vinegar
2-3 tblsp extra-virgin olive oil

– Cook the rice.
– While the rice is cooking, chop the bell pepper finely and mix it with the rest of the ingredients in a bowl. Leave to marinate until the rice is ready.
– Take the rice and put it in a bowl or on a serving plate and then add the bell pepper mix on top.
– Serve it and enjoy the flavours!
