I was asked by the people over at blogs.com to come up with a Top 10 Italian Food Blogs list, I hope you like it, there are a few more I would have liked to include, especially Italian language food blogs but, alas, 10 means ten so I had to make a choice.
I am sure there was something else that i wanted to talk about but my sieve to brain has let go of it, I will probably remember what it was as son as I hit the publish button but if that happens I will write it down in my little note book. Or in one of them, I have several so then I just need to remember in which I wrote it down. I think I better start writing down the recipe instead of warbling on about .. what? I can’t even remember what I was going on about.

Now the tomatoes you buy are so sweet and nice so that you can eat them as they are or why not stuff them with something more filling like these tomatoes with farro, grilled pepper, capers and basil.

Tomatoes With Farro, Grilled Pepper, Capers and Basil Filling

TOMATOES WITH FARRO, GRILLED PEPPER, CAPERS AND BASIL FILLING
4 servings

8 small tomatoes, preferably with thin skin
225 ml/ 1 cup cooked farro
1 medium red or yellow bell pepper
2-3 tblsp capers
fresh basil leaves, shredded
lemon juice
black pepper
salt
extra-virgin olive oil

– Cut the bell pepper into large pieces that are as flat as possible. Now you can grill them in the oven, you can grill them on a grill and you can grill them in a non-stick pan. When I only grill one pepper I usually prefer the last method because it is the quickest. Just put the pieces of peppers in the pan, no oil needed, and cook on a high flame, pressing them down with a lid until they are soft and grilled. You obviously need to do this to both sides. Dice the peppers when they have cooled down.
– Divide the tomatoes and spoon out the seeds. I usually keep these, mixing them with the farro.
– Mix farro, peppers, capers and basil. Add som lemon juice, plenty of freshly ground black pepper, salt and a little olive oil, mix well.
– Fill the tomato halves with the farro and serve.
