MEDITERRANEAN BARLEY WITH TOFU, OLIVES, SUN-DRIED TOMATOES AND CAPERS

Mediterranean Barley With Tofu, Olives, Sun-dried Tomatoes and Capers

Now I have tried to start this at least three times without managing to get a grip of what to write or how to write what I would like to say and I think it's about time I give up and just post the dish I wanted to share with you. And then do something more useful than writing things to be deleted.

I do know one thing though and that is that the Paper Chef ingredients are up, rise to the challenge - get cooking!






MEDITERRANEAN BARLEY WITH TOFU, OLIVES, SUN-DRIED TOMATOES AND CAPERS

barley, cooked
tofu, diced
small black olives
sun-dried tomatoes, soaked and finely chopped
capers in salt, soaked and drained of their excess salt
chili pepper, ground or in flakes
lemon juice
salt
extra-virgin olive oil

- Fry the tofu slowly in olive oil with chili pepper and lemon juice until crunchy.
- Mix olives, capers and tomatoes with the barley and stir.
- Add tofu, mix and serve. The simplest thing on earth.
