GOAT'S CHEESE, FIGS AND WALNUTS WITH BABY SPINACH

Now I didn't manage to come up with an entry for the Paper Chef, I've notice that I feel a bit stressed right now and that was even clearer to me when I didn't manage to come up with one single decent idea for a PC entry. That is very unusual, the PC is such a favourite of mine, I remember the first time I participated, it must have been autumn 2005, I was electrified when I made my duck meatballs with a pear and ginger sauce because it was the first time I participated in a competitive food blog event, I even think it was the first time ever I participated in a food blog event ever, Lucullian had been up for about ten days and when I think about it now, I have to say that I was kind of brave to do it so soon. Anyway, this month figs were part of the four ingredients so I went and bought myself nice dried ecological figs because I was convinced that I would be able to squirt something out of my brain that was good enough, well I didn't but that doesn't mean I won't use my figs!

This dish is one of the nicest things I have eaten recently or at least this last week. I can't deny that I was a bit hungry and that it probably was one of the reasons to why I gobbled it down with an alarming speed, I have to say that I was happy no one was watching me because I think I was a bit disgusting to look at. Anyway, this is one of those dishes where the input and output is completely out of balance, the result outweighs by far the work you put into it, I promise!


Goat's Cheese, Figs and Walnuts With Baby Spinach



GOAT'S CHEESE, FIGS AND WALNUTS WITH BABY SPINACH

fresh spinach leaves, preferably baby ones but it's OK with grown ups too
dried figs, cut into pieces
walnuts, chopped
soft goat's cheese, sliced or diced
salt
extra-virgin olive oil

- Heat up olive oil with figs and walnuts, add the spinach and sauté until wilted.
- Add a little salt, stir and then add the cheese.
- Serve as it is or like I did in the photo on discs of bread. Or in some other way.
