CIME DI RAPA OR BROCCOLI RABE WITH SMOKED PANCETTA

market day in Pistoia

This morning I went to the market in Pistoia, every Wednesday and Saturday there is a big market in the centre of the town, you can find about everything you need and want and now and then I like to check it out. Especially when there are sales like today. But it was the puntarelle and the beautiful cime di rapa (or broccoli rabe or rapini) I bought that made me the happiest.

Cime di Rapa or Broccoli Rabe

There are a lot of wonderful winter greens around right now and I am doing my best to eat as much as possible of them because soon they are gone and I will have to wait until next winter. You can use cime di rapa in many ways, I like them with pasta together with tomatoes or with cannellini beans but most of all I like them slowly cooked in olive oil with peperoncino and garlic and maybe with the addition of smoked pancetta like here.

CIME DI RAPA OR BROCCOLI RABE WITH SMOKED PANCETTA

a bunch of broccoli rabe
smoked pancetta, diced
garlic
peperoncino or chili pepper
salt
extra-vergin olive oil

– Rinse and dry the greens, chop off the thickest stems if you want.
– Heat up some olive oil in a skillet together with a slightly crushed clove of carlic. Add the broccoli rabe and a little water too. Let it simmer until the liquid has evaporated and the greens are cooked.
– Meanwhile you fry the diced pancetta until it is crispy.
– Add the pancetta to the broccoli rabe and serve hot.
