GREEN BEAN AND LENTIL SOUP WITH SUN DRIED TOMATOES AND THYME

I had no idea that I was creating such an incredible health cocktail when I made this soup but now when I have been reading up on the health benefits of some of its ingredients, I realize that this is one healthy soup!
Without going to much into details, let’s begin with the green beans, they are very high in vitamin K, vitamin A and several important minerals. And they are good too. Not only does lentils bring luck, they are also really good for your organism or maybe I should say body, organism sounds like those hyperactive things you see in an microscope. Lentils are high in iron and phosphorus (I had no idea that an adult contains almost one kilo of phosphorus!), both important for us functioning as we should. Or want. Lentils have a long history, there are traces of them being cultivated 7000 years ago. Sun dried tomatoes are a good source for vitamin C, but as they are boiled, that aspect is not so interesting here, what is interesting from an health aspect is that you find lycopene in tomatoes and that it helps to protect the body from a range of different types of cancer. And these are only the main ingredients…
But the real reason to why I created this soup was that I wanted to make a healthy and slim soup for this month’s HotM that I am hosting (If you too want to participate, check out the announcement here!) and I wanted comfort food with a lot of flavour. I got it!

Green Bean and Lentil Soup with Sun Dried Tomatoes and Thyme

GREEN BEAN AND LENTIL SOUP WITH SUN DRIED TOMATOES AND THYME
4 servings

1 small leek, the white part
200 ml/0,85 cup dried brown lentils
200 g/7 oz fresh green beans, cut into small pieces
2-3 whole sun dried tomatoes, finely chopped
1/2-1 tsp dried thyme
water
salt
extra-virgin olive oil

– Slice the leek finely and put in a pan with some olive oil and the thyme. Cook slowly until it begins to soften.
– Add lentils and tomatoes and continue to cook for a couple of more minutes before you add about 1 liter74,2 cups of water and let it simmer and simmer. You will have to add more water as the simmering goes on.
– When the lentils are soft ( it took me about 40 minutes but I used small mountain lentils, the time needed depends very much on the type of lentils you are using) you add the green beans and simmer for about 10 more minutes or until the beans are soft. Check salt.
– Serve as it is or add some grated parmesan on top if you feel like it.
