I don’t know about you but now and then I find myself mentally sprawled on the floor of my being, feeling like forlorn clothes must feel when they are flung away and have no body inside them any more. After a while I usually manage to kick myself into shape by making lists and force myself to establish routines to take care of all these everyday things that are so eternally boring but does make you feel good when they are done. So now I have a list of things to do and on top I have put those that I should have done ages ago but didn’t do and that have grown into infected blisters of my soul. Those gone and the pit of my stomach will greatly improve. Talking about stomachs, I think I will stop my ramble which has nothing to do with food but only with life. But then food is life, isn’t it so there might be a connection anyway…, well I’ll stop it now and get on with today’s recipe, another of my beloved frittatas. The things you can put in a frittata are innumerable, some might be more fitting than others but still, the frittata is a winner!

Frittata with Lemon Braised Green Beans

FRITTATA WITH LEMON BRAISED GREEN BEANS
1 person

a small handful of green beans cut into small pieces
freshly squeezed lemon juice
2 eggs
2 tbls parmesan, freshly grated
parsley, finely chopped
salt
extra-virgin olive oil

- Braise the green beans in a little olive oil and lemon juice until soft. You decide yourself how lemony you want it. Don’t forget to add salt.
- Quickly whisk eggs, parsley, salt and parmesan together, don’t mix to much.
- Pour the batter over the beans, cook until half ready, turn the frittata over and cook it for another minute.
