CHICKPEAS WITH CREAMY WINTER SQUASH AND THYME

Winter squash

It is this time of the year again, The Food Blog of the Year nominations are called for over at Well Fed Network. Every year there is a lot of humming and brumming about the FBY nominations but still I think most of us enjoy them! I do and not only because I have had the fortune/honour to be nominated in the past but also because it is such a good way to discover and rediscover old and new blogs! And nominate those that you like, I have already nominated food blogs in six or seven categories and I might add some more, still have to figure out which blog to nominate for Best New Food Blog…

But I didn’t com here just to talk about awards, I wanted to post this really simple chickpea and winter squash dish. All you have to do is to divide and clean the winter squash, rub the inside with lemon, thyme, salt and pour olive oil over it and then bake it in the oven. Then you scrape out the inside and mix it with cooked chickpeas and chopped parsley. It seems almost unnecessary to post the recipe because it is that simple!
