Chickpea fritters with Mediterranean Ricotta Cream

You might get the idea that this is dog’s food by looking at the pictures but I assure you, it is not, it is the second instalment of my Gluten-free Friday series. Today I am proposing chickpea fritters with a creamy filling of ricotta, sun-dried tomatoes and olives. Chickpea fritters are really very nice, crispy and they have that farinata flavour that I like so much. And they go so well with many many toppings, chop some fresh sweet tomatoes and onion or put some soft goat’s cheese on top and you have just made great food. And what is even better, you can eat it and your gluten intolerant friends can eat it. Together. Because we all know how nice it is to share our food, it is an important part of our cultural inheritance

Chickpea fritters with Mediterranean Ricotta Cream

CHICKPEA FRITTERS WITH A CREAMY FILLING OF RICOTTA, SUN-DRIED TOMATOES AND OLIVES
2-3 servings

fritters:
200 ml/0.85 cup chick pea flour
200 ml/0.85 water
black pepper, ground. You decide how much
a pinch of salt
extra-virgin olive oil

filling:
150 g/5,3 oz fresh ricotta
5-6 whole sun-dried tomatoes, finely chopped
8-10 small black olives, finely chopped
salt
extra-virgin olive oil

– Mix chickpea flour, pepper, salt and water. Stir well and leave to swell for a while.
– Mix the ingredients for the filling, add enough olive oil to make it smoother.
– Heat up oil in a non-stick pan and pour about 50 ml/0,2 cup batter into it. When the fritter is getting crispy, flip it over and do the other side. Go on doing this until batter is finished. Put the finished fritters on kitchen paper to drip of excess oil.
– Spoon some of the filling on top of a fritter and then put another on top, go on like this until they are finished.
