FENNEL, ORANGE AND CARROT SALAD WITH ORANGE AND ROSEMARY VINAIGRETTE

After all these days of Christmas, I have to confess that it feels good to be back to normal life again. At least for a couple of days, there’s still New Year’s celebrations (but those we really keep on a nice quiet level) and Epifania when La Befana arrives to distribute goodies or lumps of carbon/coal to nice and bad children but these are minor compared to Christmas. Anyway, our Christmas was good even though I realize that I still haven’t digested the passing away of my mother but I suppose that is normal. My memories of past Christmases tend to be more sad than sweet if you know what I mean but that’s life and I realize that I should be happy that I have nice memories at all. It actually makes me feel a bit spoilt when I just don’t feel grateful for what I have received in the past but instead feel grief, guilt must be the ‘baddest’ feeling on earth – I wish it didn’t exist.

Anyway, Christmas food tend to be on the heavy side and right now I feel a craving for vegetables and freshness. This salad fulfils both aspects, it is fresh and light but still in tune with the season!

Fennel and Carrot Salad with Orange and Rosemary Vinaigrette

FENNEL, ORANGE AND CARROT SALAD WITH ORANGE AND ROSEMARY VINAIGRETTE
4 servings

2 fennel bulbs
2 medium carrots
2 oranges
1 sprig of fresh rosemary, finely chopped
salt
black pepper
extra-virgin olive oil

– Slice the fennel and the carrots into really thin slices that you put low and wide bowl.
– Squeeze one orange into a small bowl, add salt and rosemary and then about 4-5 tblsp olive oil. Whisk quickly and vigorously.
– Cut off the peel of the remaining orange and cut out the meat of the fruit. I usually cut out the wedges without the white membrane and then slice the wedges thinly. Add it to the rest of the salad.
– Add the vinaigrette, mix the salad gently and top with freshly ground black pepper.
