It never ceases to amaze me how something made with just a few ingredients can taste so good and so much. This soup (yes another soup!) is made with four ingredients, tomatoes, potatoes, garlic and thyme, but it has such a fully developed flavour that I was surprised when I tasted the first spoon. To be honest there are six ingredients because I forgot to mention salt and extra-virgin olive oil but those are found in most of my food anyway so I don’t really count them. And oh I forgot the water… I suppose this is why I like the Italian way of cooking so much, if you have good ingredients you don’t need that many of them, they are allowed a lot of space on their own and they can shoulder that! Yesterday for example I made the simplest of dishes for dinner, a baked pasta dish from Basilicata where you make a simple ragú with minced lamb and tomatoes and bake it with pasta and mozzarella. Another dish with only four ingredients that just tastes wonderful! Fortunately there is some left for lunch. But back to the soup, you need either a good fresh tomato sauce or mature and sweet (if not, add a little sugar to the soup) tomatoes because they are the key here!

Tomato Soup with Potatoes and Thyme

TOMATO SOUP WITH POTATOES, GARLIC AND THYME or MINESTRA DI POMODORI, PATATE, AGLIO E TIMO
2 servings

1 big potato, diced or sliced
1 clove of garlic, finely chopped
a pinch of thyme
200 ml/0,85 cup fresh tomato sauce OR 3 big sweet and mature tomatoes, chopped
200 ml water/ 0, 85 cup water
salt
extra-virgin olive oil

- Slowy cook the potato with the garlic and thyme in some olive oil. Add salt and cook for 4-5 minutes, stirring all the time because potato has a tendency to stick.
- Add the tomato sauce or the chopped tomatoes and the water and leave to simmer for 15 minutes.
- Mash the potatoes a little and then serve the soup.
