The deconstruction of an apple - OVEN-BAKED APPLES WITH GINGER, RAISINS AND SESAME SEEDS

I have deconstructed and reconstructed an apple today, it left me feeling a bit like when I was a child and I was allowed to open up alarm clocks to fix them, the impossibility of putting it all back exactly like it was in the first place. A slightly exasperated feeling but in today's case it was more a question of having added new components than not finding the right places for the old ones. I wanted to be a watchmaker for a while when I was little, small bits and pieces that made other things move fascinates me even now and maybe it is not so strange that I studied poetry for such a long time. Literature is full of little cogs and wheels that get our imagination and our associations going, it triggers memories and makes us think. Even good photography does that, sometimes when you try to see what the photographer is trying to say and sometimes just because the photo stir something inside you.
But now over to the deconstructed apple, I made a mix of raisins, candied ginger and sesame seeds (no sugar but you could add a little honey but I really don't think there is any need for that) but you can use nuts or other types of seeds as well; apples are such patient ingredients, they put up and get along with almost anything I think so just use your imagination!

OVEN-BAKED APPLES WITH GINGER, RAISINS AND SESAME SEEDS

1-2 tblsp candied ginger/apple
2-3 tblsp sesame seeds/apple
3 tblsp raisins/apple

- Run ginger, raisins and sesame seeds in a blender or spice grinder for 1 minute or 2 until they begin to stick together.
- Take out the core of the apples. If you want to make the eating easier, peel the apples, then cut them into slice thickish slices.
- Start recomposing the apples with the sesame seeds, ginger and raisin mix between each slice. Fill the middle with it as well. I suggest that you do it straight into the greased oven-proof form you are going to use.
- To make it more stable, you can stick a toothpick into each apple.
- Add a little water to the form and then bake in oven (175°C/350°F) for about 25 minutes.
