There’s an aspect to the autumn that I find quite difficult to live with and that is that I am hungry all the time. After breakfast it doesn’t take long before I start dreaming about lunch and I often have to eat it far earlier than I should have which in its turn means that I have to eat something in between lunch and afternoon snack in order to survive and it goes on like this all day long. And it has preferably to be carbohydrates or proteins because honestly, I like carrots but they are not filling. They don’t satisfy like bread does. Or a nice cheese. Or like some slices of salami do. But that’s not so good for your figure so I try, oh yes I try to make myself healthy, satisfying meals now and then and I do occasionally manage to cook something before I throw myself on all the cheeses I tend to buy en masse right now. This is an example of a healthy, simple and not too fattening meal, a fresh tomato soup that gets some crunch and crispness from the sautéed snap beans, garlic and fried bread. I always keep my tomato soup simple because I love the natural flavour of tomatoes but the addition of a little fresh ginger gives it an interesting dimension!

TOMATO AND GINGER SOUP TOPPED WITH GARLIC SAUTÉED SNAP BEANS AND CROUTONS

tomatoes, fresh and mature
fresh ginger, finely chopped or grated
snap beans, cut into small pieces
garlic, finely chopped
bread, diced
salt
(sugar)
extra-virgin olive oil

– Chop the tomatoes and put them in a pan over medium heat. Let it cook for about 15 minutes. Don’t forget to salt.
– Meanwhile you sauté the snap beans, garlic and croutons in olive oil until the beans are soft but with a little crunch to them and the bread just plain crunchy.
– Run the soup in a blender until smooth, taste it and if needed, add a little sugar to round off the tomato taste. Add as much ginger you feel like, a little of raw olive oil and stir well.
– Serve in bowls topped with plenty of beans and croutons.
