Pasta with creamy turkey ragú

I have just deleted a longish text I wrote because I got too fed up with myself, sometimes I really think you should consider yourself lucky! Anyway now I don’t have much time of my allotted blogging time left so I will just post today’s recipe! This is my first entry to this month’s HotM, the theme is orange-yellow, i.e. food that is, was or turn into one of those colours or maybe both. And is heart healthy too. Simple no? Pasta with creamy turkey ragú

PASTA WITH CREAMY TURKEY MEAT SAUCE or PASTA CON RAGÚ CREMOSO DI TACCHINO
6-8 servings

600 g/ 21 oz pasta
500 g/ 17,6 oz minced turkey breast
1 carrot
1 celery stick
1 onion
1 clove of garlic (optional)
75-100 ml/ 0,3-0,42 cup fresh cream (or milk if you want to keep it even healthier but I really don’t think you need that)
800 ml/ 3,4 cups tomato sauce
1 tsp dried thyme
salt
extra-virgin olive oil

– Chop the vegetables finely and braise them in olive oil for 10 minutes.
– Turn up the heat before adding the turkey meat, salt and thyme. Sauté until all the meat has been cooked but not browned.
– Add the cream, stir and after 2-3 minutes add the tomato sauce.
Leave the ragú to simmer slowly for at least 1 hour without the lid on. Stir often.
– Serve with freshly cooked pasta.
