GINGER AND PINE NUT FILLED PHYLLO CIGARS

I am a bit disconcerted because recent events have made me realize that I obviously give a different image of what I am here on my blogs (English and Swedish language) than how I am in real life. And this disturbs me I must admit. Not only do people apparently think I have political opinions completely different from those that I have, they also think I am much nicer and more well-behaved than I actually am. Of course it could be that some people read blogs regardless of the political opinions of the blogger but I have my doubts. Maybe I am wrong and judging by my own way of thinking, probably people are far more broad-minded than I am and I am just cynical. Which would mean that the world is far better than I think it is. Could it be so? (no comment) Anyway, I don't know what disturbs me more, the political aspect or that people think I am better than I am? The first is maybe unavoidable but the second borders on dishonesty on my part, far more difficult to live with.

But food is the real subject matter here and I do have a sort of recipe to post today. Well, it is so simple that it feels almost silly to post it but as I finally found phyllo pastry in my shop and now is on a phyllo pastry trip, I want to share this sweet that I made yesterday.

Ginger and pine nut filled phyllo cigars


GINGER AND PINE NUT FILLED PHYLLO CIGARS

phyllo dough, I used 4 sheets not to make the rolls too thick
candied ginger
pine nuts
honey
apricot jam

- Chop ginger and pine nuts and mix with honey.
- Cut the phyllo dough in strips about 10 cm/4 in wide.
- Brush dough with apricot jam, be careful to cover the whole surface. Add the ginger and nut mix in a long string in the middle of each phyllo strip.
- Roll the dough onto a long tube/cigar, the apricot jam serves as glue and keeps it together.
- Bake in a pre-heated oven 175°C/350°F until golden, it takes about 10-15 minutes.
Let the tubes cool down before cutting them into shorter cigars.
