Chili potatoes with corn and parsley

We’re having such incredibly sweet weather here lately, it restores your belief in a kind world when you at least feel a warm atmospheric welcome when you step out in the world. It’s so warm that we actually keep our windows and doors open daytime because it’s warmer outdoors that indoors! Oh yes I know it’s boring to hear about the weather but this bout of nice weather is making me nicer too so I think it deserves all the praise it can get, maybe it feels as if it has a reputation to live up to now and therefore will try harder to remain nice? Who knows, it’s worth trying isn’t it? I mean, we all complain about the weather so I can understand if it just goes on being bad, no use to make an effort if no one notices. If all you hear is how badly you behave, it’s not that likely that you think it’s worth the effort to change, no?

Chili potatoes with corn and parsley

CHILI POTATOES WITH CORN AND PARSLEY or PATATE PICCANTI CON MAIS DOLCE E PREZZEMOLO
4 servings

5-6 potatoes
2 ears of corn
chili pepper
garlic
parsley, finely chopped
salt
extra-virgin olive oil

– Peel and slice the potatoes. Cut the corn off the cob.
– Braise the potato in olive oil together with chili pepper, salt and garlic. Add a little water to speed up the process.
– When the potatoes are soft, add the corn and braise on for about 4-5 minutes.
– Sprinkle the parsley over and serve!
