After making the Paper Chef entry, I have now ended up with a lot of beetroots to use. Cooked beetroots because when I needed to buy one, the season seems to be over here in north Tuscany and I couldn’t find a single one in its natural state and I therefore had to buy a bunch already cooked ones au naturelle. Nothing wrong with that apart from me having a natural inclination against buying things that I could do myself. I blame that on my parents, I know I have written about this before but this is something big in my life that I fight against very week: you can do anything and don’t waste, read hoard. I was brought up in a family where you did everything yourself, my mother even painted our car herself goddammit and you can imagine the conflicts that can create. On the one hand I am more or less free of those notions that women can’t do the things that traditionally are assigned to men which in its turn has given me a certain confidence and freedom but on the other hand it has often made me feel uneasy every time something has to be done around here because either I need to learn something new or I feel badly motivated because I don’t have the time or I just don’t want to do it. It leaves me with a tingeling of guilt when we get someone to do something for us like painting the whole house from outside in or when I ask a neighbour to cut down our very hardy hedge because I should do it myself. It doesn’t seem to matter that I would do a much worse job that they do and it would take me like three weeks longer. Luckily I married a man who comes from a family where they have the exactly opposite approach, if you can pay someone to do a job-do it and we have managed to balance this in a quite good way. But still, I still can feel it deep down…
Back to the beetroot, I can feel that I will explore the possiblities of the beetroot until the last slice, yesterday I made this colourful really nice autumn-winter salad that made my eyes happy.

BEETROOT AND WINTERSQUASH SALAD WITH CAPERS AND PARMESAN

beetroots, cooked
wintersquash, raw
green salad leaves
potatoes, cooked
capers,
parmesan cheese in flakes
lemon juice
salt
extra-virgin olive oil

– Dice the beetroots, winter squash and potatoes and put them in a bowl.
– Add capers, salt, lemon juice and olive oil and let it stand for a little while to absorb the flavours.
– Add the green salad and the parmesan. Toss it and serve.
