ROSEMARY SCENTED CHICKEN MEATBALLS or POLPETTINE DI POLLO CON ROSMARINO

One of the things that I got now when all the stuff from my parents arrived was a meat grinder. I have been wanting one for many years now and now I am the happy owner of a old-fashioned, hand driven Husqvarna meat grinder and it feels good. Now I will be able to make minced meat from all sorts of meats and mix as I want, something I have been longing to do because it is not always so easy to get exactly what you want in the shops. The first thing I did was these rosemary scented chicken meatballs, so simple yet tasty and even Marco who definitely doesn't like chicken approved of them. That I took as high praise.

Rosemary scented chicken meatballs




ROSEMARY SCENTED CHICKEN MEATBALLS or POLPETTINE DI POLLO CON ROSMARINO
3-4 servings

500 g/ 17,6 oz chicken breast
1 small onion
1 egg
3-4 tblsp bread crumbs
1 sprig of fresh rosemary, finely chopped
salt

- Grind the chicken meat in a meat grinder together with the onion.
- Put the meat in a bowl, then add egg, bread crumbs, salt and rosemary.
- Form meatballs and fry in butter and olive oil.
