One of the reasons that I don’t post recipes as often as before is that to food blog the way I do really isn’t that good for the figure! If I blogged about what we had for dinner I might not be tempted to eat more than I need but I usually make the dishes especially for Lucullian (and for us if they are good and post-able) which means that I make dishes that not always are part of the plan. And that maybe sholdn’t be part of my body either. Anyway, this summer I finally managed to get going to shed some of that excess that had gathered as an extra clothing over my body, I mean I couldn’t go on pretending that someone shrunk my clothes during the night, noone has that much energy. This meant blogging less but even though I miss it, I feel better about myself now when I realize that I must have shed about 4-5 kilos and I hope to get rid of some more now when I have started. I refuse to weigh myself, I would probably become obsessed so I just estimate the loss but I think it is pretty accurate. I know which pair of trousers I want to be able to se again if you know what I mean. Slowly I will get there, I do not believe in diets for me, I have an obstinate streak in me that would revolt against the musts so I just eat less and move more. But now and then I fool my metabolism and eat sweets things and/or just too much! Like when I made this apple marmalade, well, it was supposed to become an apple sauce but I left it to simmer on the stove, forgot about it and lied down on my sofa together with my youngest daughter to listened to the happy songs (preferably with animals too) from the Beatles White Album on my mp3 player. So the apple sauce turned into a delicious caramelized apple marmalade, sweet and tasty and not really good for ‘diets’ but who cares about that on a lazy Sunday afternoon?

Apple marmelade with rosemary and vanilla

CARAMELIZED APPLE MARMALADE WITH ROSEMARY AND VANILLA or MARMELLATA CARAMELLIZZATA DI MELE, ROSMARINO E VANIGLIA

3 apples
80 g/ 2,8 oz sugar, more or less depending on how sweet the apples are
1 sprig of fresh rosemary, chopped (but obviously not the wooden part)
1/2 vanilla pod
100 ml / 0,42 cup water

– Peel and dice the apples and put them in a small pan with a heavy bottom (hopefully you understand what I mean) together with sugar, the chopped rosemary, the scraped out vanilla pod (the scraped out part must be added too of course) and water.
– Simmer on low heat until it is beginning to caramelize. It takes some time, I have no idea how long it takes as I forgot all about i and just arrived in time! It can’t be wrong to stir it now and then as well!
