YOGHURT WITH ‘CINNAMONED’ APRICOTS AND CHOCOLATE CHIPS
Apparently this is my apricot week but I think I can safely promise that this will be the last apricot post for a while. I know when I’m getting boring. But still, this was so nice that I want to share it with you. When you feel that you need a treat, this is a good one to make. Or even when you don’t deserve a treat because it’s not even particularly unhealthy so you can eat it any time really as long as you have apricots. Fresh are better but even dried ones work. So there’s no excuse, do as I did, make it and then eat it hidden behind a bush to get it all for yourself – yes I am that nasty!
YOGURT WITH ‘CINNAMONED’ APRICOTS AND CHOCOLATE CHIPS
1 pot of good natural yoghurt
2 mature apricots
1-2 tblsp sugar, optional but I liked it
1/2 tsp cinnamon
1-2 tblsp water
2 small squares of dark quality chocolate, finely chopped
- Chop the apricots, put them in a small pan and add sugar, cinnamon and water. Let it simmer until it has become dense and jam like.
- Let it cool down a bit.
- Spoon some yoghurt into a glass, then a layer of apricots, sprinkle some chocolate over and then spoon on the rest of the yoghurt.
- Top with the remaining apricots and the rest of the chopped chocolate.
- Stick in a spoon and start eating.
