TOMATO AND BARLEY SALAD WITH OREGANO or INSALATA DI POMODORI E ORZO CON ORIGANO

I was going to do some serious grilling for lunch today (it's a holiday here) but the weather is of the worst sort, it's neither raining nor not raining, a drizzle that obviously increase every time I go out to start the grill. So I have given up, we'll grill indoors but it's not the same. I am trying to find the positive side to it but can't find it right now, maybe when I feel more zen about the whole thing. Writing this at least makes me realize what an extremely petty problem this is, really I should be ashamed shouldn't I? So now I will slink off with the tail between my legs down to the kitchen and start behaving like a responsible, thinking person. Maybe. This character of mine doesn't really help.

Tomato halves filled with barley and oregano




TOMATO AND BARLEY SALAD WITH OREGANO or INSALATA DI POMODORI E ORZO CON ORIGANO

cooked barley
sweet (or should I call them tasty?) tomatoes. I used plum ones that I could fill with the barley but you can just as well chop the tomatoes and add them to the barley.
fresh and sweet onions
oregano, fresh or dried, chopped
salt
vinegar
extra virgin olive oil

- Make a quick vinaigrette with vinegar, salt, oregano and olive oil.
- Chop the onion and mix it with the barley. Add the vinaigrette. If you want to serve the salad like I do here, you just scoop out the seeds etc. out of the tomato halves, chop the etc. bits quickly and add them and the seed to the barley that you then spoon into the tomatoes. If you go for a more traditional salad, you chop the tomatoes and add them to the barley and that's it!
