Tomorrow I will say something about the Expat GTG (I did enjoy it) because today I feel a bit like I have been run over by a tank. I realize that I am completely out of training when it comes to socialize with about 25 more or less complete strangers and that it obviously put a lot of strain on me even though I don’t realize it while I’m in the middle of it. So today I will just post a recipe, work one hour and then I will go out and enjoy this second lovely spring day in a row!
I’m not a vegetarian, I used to be one ages ago but I eat more tofu now than I did then. I think tofu had got an undeserved reputation of being something that only vegans and vegatarians should eat, there are so many ways of making it taste great and this one of them.

SAUTÉED TOFU WITH AGRETTI AND CHERRY TOMATOES or TOFU CON AGRETTI E POMODORINI

tofu
a bunch of agretti
cherry tomatoes
garlic, chopped
chili pepper, chopped
lemon juice
sat
extra-virgin olive oil

– Slice the tofu and start to sauté it in olive oil together with garlic and chili pepper. Squeeze some lemon juice over it and add salt.
– While the tofu is being sautéed, rinse the agretti and cut off the roots. Divide the cherry tomatoes in two.
– When the tofu has turned golden and crunchy, add the cherry tomatoes and go on cooking for 3-4 minutes.
– Add the agretti and sauté until they are soft but still al dente.
