Daring Bakers Perfect Party Cake
I am very good at procrastinating and fortunately I am not alone in this which meant that I could make my Daring Bakers’ challenge for March together with my usual fellow bakers Karen and Tanna, well to tell the truth Tanna who is a responsible woman (or is she an obsessive baker?) had already made her cake once but she joined us to make another one and to use one of her new, incredible cake tins. This month’s challenge is hosted by Morven of Food Art and Random Thoughts who chose Dorie Greenspan’s Perfect Party Cake, a three layered cake with buttercream and fruit preserve to flavour it. Now I have never tried a Dorie Greenspan recipe but I know that many of my fellow Daring Bakers love her so I was curious to make this cake. I started out well but after a while I stumbled and then again, fortunately I managed to regain the balance and produce a decent cake but I am beginning to be a bit worried about my memory.
The first stumble was when I took out the cake and realized when I was cutting it that it hadn’t baked well on top despite the dark brown colour, this has never happened to me before, I wonder if my oven has decided that it’s time to retire because it can hardly be blamed on the cake itself. So instead of a three layer cake, I made a two layer cake. Then I proceeded to make the butter cream, I worked on and finished it only to realize that in the middle of adding the four egg whites needed, I obviously got distracted or had a blackout and forgot to add two of the egg whites. Not that I had noticed any difference but then I rarely make butter cream so I am no expert. Well, well. Neither me nor Marco like butter cream so I decided to make the cake as child friendly as possible, chocolate butter cream with my own strawberry jam, the colour combination is not the best I have to say but sometimes one has to disregard aesthetics for higher gains, no? So here it is! Two of my children likes it a lot, the third is not that fond of sweet things but he did eat a big slice so I think I can say that the cake, despite my unprofessional treatment, can be judged a success!
