TRANSFORMER RÖSTI WITH CHICKEN AND FRESH HERBS

I'm back after a frenzied trip, the airplane was late going to Sweden and when I was struggling against the icy wind filled with snowy spikes at 2.00 am, all alone in the Stockholm night but knowing that I had a warm bed waiting at a friend's home I felt so happy about living in Italy that you can't imagine! When I looked at the violets outside our doors this morning I felt good. But I'm just so tired, both physically and emotionally, so today I think I'll have to do some baking, the comfort of baking is noteworthy and I'll let you know if I come up with something worth a post.
But until then you will have to make do with these transformer rösti, I love rösti as you can see here and here, and I felt like making them a little bit more filling so I added chicken, onion and fresh herbs to the potatoes.

TRANSFORMER RÖSTI WITH CHICKEN AND FRESH HERBS
3-4 servings

375 g/ 13.25 oz chicken breast
500 g/ 17.65 oz potatoes
1 medium onion, the sweeter the better
Fresh herbs of your choice
Salt
Black pepper
Extra-virgin olive oil

- Chop the chicken breast finely, I do it by hand but I suppose you could mince it.
- Peel and grate the potatoes on the coarser side of the grater.
- Chop the onion and the herbs finely and mix the ingredients in a bowl, don't forget to add salt.
- Heat up some oil in a skillet or non-stick pan, form balls (the size you want) out of the potato mix, flatten them a bit and fry them in the oil on both sides.
- Serve with a salad and I think some freshly chopped tomatoes could be a nice 'sauce'.
