GREEN BEANS AND EGGS WITH HOT TOMATO SAUCE

Yesterday I saw an incredible documentary that made me happy. And it made me think. It was about an area in Peru where a football league for women had been created and in which the women of far off mountain villages participated. This particular programme was about one village, poor and isolated, where the women had started to play football. They played every Sunday, sometimes just training, sometimes they travelled far to play against other villages, always playing in their traditional clothes, in colourful skirts and with sandals on their feet but with great gusto and happy faces. One of the husbands said that his wife had become a happier person through this and I thought about what a spoilt brat I am even though I definitely can’t be called rich or anything. But I think I should think more often about how many things I have that make me happy and feel more when I actually do things instead of just doing them as if they were granted. That’s it, we take so many of our pleasures for granted, partly because we are not concentrating on what we actually are doing but already thinking about next thing to do, I know I do. I think I would gain so much if I concentrated on what I am doing. Like now, it is a pleasure to blog, to be able to write about what I think and express my thought, not to speak about sharing recipes with you so now I am going to concentrate on that:
One thing is sure and that is that I am completely fed up with beetroots, cabbage and other winter vegetables, I want more so I got more which put me in a dilemma, what to do, should I buy more local or should I support Fair Trade food? I went for the latter, not only because I wanted to buy green beans but mainly because I feel very strongly about human rights and human working conditions and then especially in Africa so when I saw that my supermarket sold green beans from Burkina Faso I went for it.

GREEN BEANS AND EGGS WITH HOT TOMATO SAUCE

Fresh green beans
Hard boiled eggs
Tomatoes
Fresh ginger
Chili pepper
Capers, optional
Salt
Extra-virgin olive oil

– Steam (preferably) the green beans and chop the tomatoes finely.
– Chop chili and ginger and heat it up in some olive oil, add the tomatoes and sautĂ© quickly until it has become dense and saucy.
– Slice the eggs, put the bean on plates or on a big plate, put the egg slices over tem and then top with the tomato sauce. Add capers if you want.
