LENTIL SALAD WITH RADICCHIO DI TREVISO, CELERY AND CAPERS

Sometimes I’m surprised at how good just normal, slightly boring living can feel. Everyday things suddenly are so comforting and relaxing. This includes blogging, always a pleasure and as the recipes that were supposed to be posted last week are here anyway I don’t even have to make an effort.
I have to say that I’m slightly taken aback by your incredible kindness, your comments and your emails are so full of empathy, Thank You so much, I’ll try to answer as soon as I feel a bit more energetic.
Yesterday I noticed that the daffodils are beginning to show their leaves and I have two small violets shyly showing their faces by our door so I can see that spring is approaching. My mother would have loved that.

LENTIL SALAD WITH RADICCHIO DI TREVISO, CELERY AND CAPERS
2 servings

250ml/ca 1 cup cooked green or brown or black lentils
1 head of radicchio di Treviso or some other type of radicchio salad
2 sticks of celery
1-2tblsp capers
1 pinch of dried oregano
Lemon juice
Extra-virgin olive oil

– Mix the lemon juice, olive oil, oregano and capers and pour it over the cooked lentils. Leave to marinate for awhile.
– Cut the radicchio and the celery sticks into pieces and add them to the lentils.
– Mix well and serve.
