SALAD WITH GREEN BEANS, AVOCADO AND PINE NUTS or INSALATA DI FAGIOLINI, AVOCADO E PINOLI
Right now I’m up to my ears in foody things that I must do, I feel as if I’m working all the time, and the big problem when you work with/on things that has to do with food is that there’s always food to be cooked anyway and right now I feel that where ever I turn there’s food food food. Therefore I’m making it easy for myself here, I need to re-shoot the photos for some of my older recipes here for a project so I simply repost them with the new photos. Bad I know but to be sincere I feel as if this blog is full of good recipes that truly deserve another 15 minutes of spotlight. So as I go on shooting the new photos I will repost the recipes. Hate me if you want but I just don’t have the energy left over for thinking about new food right now and addicted as I am to blogging I need my daily dose of it. I never thought it would get this far when I started. Addiction. hmmm

SALAD WITH GREEN BEANS, AVOCADO AND PINE NUTS or
INSALATA DI FAGIOLINI, AVOCADO E PINOLI
Vinegar or lemon juice
- Steam or boil the snap beans and cut the avocado meat in pieces. You can divide the beans if they are too long.
- Put them in a bowl and pour the vinaigrette (vinegar or lemon juice, salt and olive oil) that you have whisked together over it. Mix well.
- Sprinkle as many pine nuts you want over the beans and the avocado and serve!
