I like Mondays, never been that fond of Bob Geldof and I have never agreed with him on his I Don’t Like Mondays, not that it was his statement in the first place but still. Mondays means new beginnings and as I have the luxury to work from home and don’t have to meet a lot of enervating colleagues, I relish the beauty of Mondays when I am alone after a weekend full of children at home and a lot of noise. I like having my children around but to be honest I don’t miss them much today. Well if they weren’t coming back later on I probably would miss them but as it is, it’s nice to be alone for some hours. Does this make me a bad mother? No, I don’t think so but I know of people who do. To me it’s obvious that my children takes the first place in my life but this doesn’t mean that they have to be in my mind all the time. Having children doesn’t mean that your own self has to cease to exist, on the contrary it’s vital that you keep it alive because children devour you and if you don’t hold on to what you are and were, you will be completely lost when they begin to have their own lives and you are moved out from the center to a more marginal position. So I keep on enjoying myself when they aren’t around, I like being with them but I really enjoy the freedom and luxury of only having to take care of myself when they or I are elsewhere. Without feeling guilty.

FALSE CANNELLONI WITH SPINACH AND TALEGGIO

Sheets of fresh pasta
Fresh spinach leaves
Taleggio cheese, diced
Balsamic vinegar, optional
Salt
Extra-virgin olive oil

Make your own fresh pasta or buy the sheets ready made, whatever makes you happier and cook them in abundant boiling water, lightly salted. When you take out the pasta, cover the sheets with a thin film of olive oil. Cut the sheets into rectangles of the size you want.
– While the pasta cooks you quickly sauté the spinach in a little olive oil, not too much, and then you add the Taleggio dice to it and toss it until it’s beginning to melt. Add a dash of balsamic vinegar if you want.
– Put the spinach and Taleggio in the middle of each pasta sheets and roll it simply into a cannelloni roll and serve while still warm.
