One of the things that I miss of Sweden is horseradish. I really love horseradish so every time I manage to find a piece here I jump on it! Well I buy it and bring it home like a personal trophy. I love the prickle in the nose that it gives me when eaten raw and if I dared I would snort it. But as the responsible mother of three I am, I try top keep a normal behaviour, can you imagine the faces of my children if they discovered me in the kitchen snorting grated horseradish?? More uncool that that I could hardly be, could I? A weak imitation of certain top models or should we call it a food bloggers imitation? Anyway, it would be doomed to fail, both as an imitation and as a drug so I get my kick in this way instead:

CROSTINI WITH TOMATOES AND HORSERADISH or CROSTINI CON POMODORINI E RAFANO
Cherry tomatoes
Fresh horseradish
Small slices of bread
Salt
Extra-virgin olive oil
- Toast the bread lightly.
- Cut the tomatoes in halves and braise them in some olive oil until soft. Add a little salt.
- Put the tomatoes on top of the bread slices and grate fresh horseradish over them.
- Eat fast and enjoy the prickling!

I have become the a bad blogger because I either forget or I don't have the time to answer your comments but that does not mean that I don't read or appreciate them, quite the opposite really. The generosity that shines through what you write and the fact that you take the time to comment on my posts makes my blogging worthwhile so Thank You for what you do for me and please keep on commenting!
