TOMATO AND SNAP BEAN SOUP WITH BAY LEAVES AND SOFT GOAT'S CHEESE

An absolutely horrible and disgustingly grey and rainy day has turned into a perfect late summer day! I like when it goes from worse to better, life often does but we have a tendency to only notice when it goes the other way around. It's strange how we take better for granted and worse as a more or less personal insult. But who can resist suddenly beautiful weather?
yesterday I snook out and stole some bay leaves from the hedge growing next to my gate, I know that my neighbour Virgilio is happy to share it with me but I still try to do it unseen. The reason to why I did this was that I wanted to make a soup with bay leaf flavour, I had snap beans and an enormous amount of tomatoes and by adding the bay leaf to these ingredients I got a sweeter taste!

TOMATO AND SNAP BEAN SOUP WITH BAY LEAVES AND SOFT GOAT'S CHEESE

150 g/5 1/4 oz snap beans
400 g/ 14 1/8 oz mature tomatoes
1 small onion
3-4 fresh bay leaves
500 ml/2.1 cups stock
Salt
Extra virgin olive oil

- Chop onion and snap beans and braise them together with the bay leaves in some olive oil for 4-5 minutes.
- Add the chopped tomatoes and some salt and braise on for another 4-5 minutes.
- Add the stock and let it simmer until the beans are ready.
- Run the soup in a mixer until smooth and serve it with a small dollop of soft goat's cheese.
