SALSICCIA WITH GREEN GRAPES or SALSICCE CON L’UVA

UVA

Today school finally started for one out of three of my children (the others begin on Wednesday) so now I’m back to getting up at 6.30 six days a week. Why can’t anything just be positive, why does there have to be drawbacks like this added to most things? Not that I mind getting up early but I don’t like to have to get up early; I remember that when I was expecting my youngest daughter who is seven years younger than the middle one, I suddenly realized one early and dark winter morning that I was actually prolonging the torture for at least another seven years of my life. I wonder if I had wanted to have another child if I had thought about that before? On the other hand, a lot of things wouldn’t get done if we knew what we were in for would they? And that’s good because I’m very happy about having a child around now when the others are teenagers or just generally pubertal, they are so simple to deal with, small children.

Don’t forget that the Paper Chef is on, the ingredients are chili pepper, eggplant, smoked swordfish and because the theme of this edition is Home, something you have at home. Simple, no? Get going, challenge yourself!

This a autumn must dish, I make it every autumn when grapes are in season. Tiziano’s, my butcher, salsicce are divine in general and especially like this. You find this traditional dish in both Umbria and Lazio and maybe even in other regions.

UVA E SALSICCIA

SALSICCIA WITH GREEN GRAPES or SALSICCE CON L’UVA

Uncooked salsiccia or some other high quality meat sausage
Green and sweet grapes
Extra virgin olive oil

– Fry the sausages in very little olive oil, you can skip it if you want to. The sausages can be cooked whole, halved or cut into pieces, you choose.
– When the sausage is ready and has let go of most of its fat, you throw away about half of it and then add the grapes.
– Cook sausages and grapes for about 2-4 minutes, always stirring. The grapes are supposed to absorb the flavours and not to start leaking their juices so be careful.
– Serve! In some recipes you cook the sausages and the grapes together in the oven but I prefer to do it on top of the stove so that I’m can see what’s happening.
