GRILLED PEARS WITH GORGONZOLA FILLING or PERE GRIGLIATE CON GORGONZOLA

I know that this combination of flavours is old as the street as my mother used to say but sometimes I tend to forget how good certain old, almost commonplace flavour combinations or dishes can be because I don't make them anymore just because they are old and too common. A sort of Catch-22. This is a typical example of this, the combination of gorgonzola and pear is really very good I find but I rarely eat it. I should now when I find nice pears and I will, I will.

GRILLED PEARS WITH GORGONZOLA FILLING or PERE GRIGLIATE CON GORGONZOLA

Firm but mature pears
Gorgonzola cheese
Extra virgin olive oil

- Slice the pears finely, brush a thin coat of oil on both sides and grill them lightly in a grill pan or if you don't have one, in a iron skillet.
- Slice the gorgonzola thinly and put a slice between two warm, grilled pear slices.
- Serve either whole or cut up like on the photo.
