GRILLED CHICKEN BREAST WITH FIG & BALSAMIC SALSA

This is my first entry for this month's HoTM's Fruits and Berries theme. There are still a lot of figs around and as I have developed a liking for sweet and savoury thinks lately the idea of making a salsa/sauce with figs and balsamic vinegar immediately sprang to my mind. The good thing about this is that there's very little fat as the chicken breast is grilled au naturell, the bad is that the sauce doesn't look so good. But it is, it has a nice taste to it, the better the figs, the nicer the taste! I kept it very simple so this is more a serving suggestion than a recipe actually.

GRILLED CHICKEN BREAST WITH FIG & BALSAMIC SALSA

Chicken breasts
Figs, blue or green. Blue are better in my opinion.
Good balsamic vinegar, it pays off to spend some on it
Salt
Extra virgin olive oil

- While you grill the chicken breast, you peel the figs and slice them thinly.
- Braise them slowly in a little olive oil for a couple of minutes, adding some balsamic vinegar towards the end.
- Serve with the grilled chicken and vegetables of your own choice.
