
It's been a long time since I last made something gluten free, no that's not true because I often make gluten free food but its almost always food that is naturally GF . So let's put it this way, I haven't done any GF baking for a long time but today I have recipe for Gluten free polenta and rice cookies that have a wonderful intense lime flavour. I find it quite hard to make cookies with a really zesty lemon or lime taste but this time I was successful and I'm eating these cookies non stop right now. I will regret that soon. They are very tender and the only negative aspect I can find is that they are a bit crumbly the first hours.

GLUTEN-FREE ZESTY LIME AND POLENTA COOKIES
135 g/4 3/4 oz butter
150 g/5 1/4 oz sugar
1 egg yolk
200 g/ 6 oz corn starch
100 g/ 3 oz rice flour
80 g/ 2 3/4 oz polenta flour
2 limes, juice and grated zest
- Stir butter and sugar smooth and incorporate the egg yolk.
- Add the lime juice and the grated zest and stir well.
- Sift corn starch and rice flour into the mixture and then add the polenta flour. Now, if you don't like the crunch that polenta flour gives the cookie, I suggest you to let soak a bit in a little, very little, water before adding it in order to make it softer.
- Mix the dough well and then make small balls that you flatten out with a for on a baking sheet.
- Bake in a pre-heated oven (175°C/347°F) for about 10-15 minutes, check them often.
- Let them get cold before you move them.
