BRUSCHETTA WITH FAVA BEANS, SHRIMP AND CHILI PEPPER

Today I have been a responsible mother, I have been to the hospital to do a mammography screening. I have several friends who have had breast cancer, one of my dearest friends had to remove a breast quite exactly one year ago and this made me realize that if it happened to her, it could happen to me. But I'm a real slow starter and the queues are long so it took until today. Now, I worry about dying mostly because of my children, not that I worry about death but when I do it's because I don't want to leave them motherless until they are older and more independent. Children snare you to head to foot in many ways and this is one of those ways. So I took this responsibility and now I have to try to stay alive as long as possible, therefore I have to do checkups now and then. I hope you do that too.

I found some fava beans the other day, it is difficult for me to resist them and especially when I haven't had any for some time.

BRUSCHETTA WITH FAVA BEANS, SHRIMP AND CHILI PEPPER



BRUSCHETTA WITH FAVA BEANS, SHRIMP AND CHILI PEPPER

Rustic bread
100 g/3 1/2 oz fava beans
2 cloves of garlic
1 fresh chili pepper
75 g /2 5/8 oz small shrimps
Salt
Extra virgin olive oil

- Cook the broad beans in salted water until almost ready. Let them cool a little and then you shell them or maybe it's better to say that you take opp the tough coat they are wearing.
- Chop the garlic finely and braise it together with the sliced or chopped chili pepper for a couple of minutes.
- Add the broad beans and let them braise a little so that they absorb the flavours.
- Now you add the shrimps and begin to sauté until they are ready, just a few minutes.
- Toast or grill the bread and then top it with the fava beans and shrimp mix.
