BRAISED CARROTS WITH FRESH CHILI AND GINGER ON QUINOA or CAROTE BRASATE CON PEPERONCINO FRESCO E ZENZERO SU QUINOA

Today I lost my son for one hour. No one, except himself obviously, knew where he was and even though I wasn’t that worried I began to feel a faint shadow of what all those families where a child go missing without any reason at all must feel. I have always thought that it must be like living a nightmare, a constant, nagging nightmare. But he came back and I’m so happy he just managed to miss the bus twice. You see, he is the one of my three children that something could happen because he’s pretty distracted and not very concentrated on what he is doing and I always take a deep breath when he has to do something that just might go wrong. I try do do it quietly because I don’t want to precondition him with my fears but still… So please tell me that all your sons where like this when they were small/young and that they now are completely in control of themselves and their bodies! Thank you!

Right now I have a craving for fresh chili, I cook with it every day and I find it so good.

BRAISED CARROTS WITH FRESH CHILI AND GINGER ON QUINOA or CAROTE BRASATE CON PEPERONCINO FRESCO E ZENZERO SU QUINOA
2 servings

200 ml/ 0.85 cup quinoa
3-4 carrots
Fresh ginger, I used quite a lot
1 long fresh red chili, not too hot but still hot
Salt
Extra virgin olive oil

– Rinse the quinoa and then let it cook for about 15 minutes. Drain.
– Slice or chop the carrot finely. Chop the ginger finely too and slice the chili pepper.
– Braise it all together until the carrot is soft and slightly golden. Stir all the time and don’t forget to add some salt.
– Serve the braised carrots on top of the quinoa. Or mix it if you prefer that!
