SARDINE EGGS WITH CHILI AND GINGER

Not much of any interesting cooking going on now in our kitchen here in Sweden, we are on a sort of vacation after all. And I always find it rather difficult to adapt to someone else’s kitchen and kitchenware. Not to speak about the stove! Well about everything actually so I just do basic stuff, fortunately we get invited by friends and then it’s alwyas nice to have an excuse to go out and eat as well. But I’m always so happy to come back to my own kitchen… I made these eggs before leaving for Sweden and as they are quite good I wanted to share them with you. I love this type of stuffed eggs, they are nice on a buffet table or as a quick lunch on your own and they always disappear quickly!

SARDINE EGGS WITH CHILI AND GINGER

1 egg, hardboiled (per person, more or less)
1 sardine in oil
Fresh chili pepper, finely chopped
Fresh ginger, finely chopped
Cucumber
Salt
Olive oil, extra virgin

– Mash the sardines (I take out the spine first) together with the chili and the ginger.
– Cut the eggs in halves length wise, take out the egg yolks and mash them together with the sardines.
– Add some oil and salt to make a softer mixture and make small balls that fit into the holes in the egg whites.
– Make cucumber spaghetti with a zester and dress the sardine balls with them like scarves!
– Serve!
