This is really a very last minute, well last day, post but I really haven’t had the time nor the opportunity to participate in this month’s HotM until now. Better late than never. This month it’s Joanna of Joanna’s Food who is holding the reins and I’m looking forward to her roundup as I haven’t got a clue to who are participating this month! I like to grill our food and we are lucky enough to have an inbuilt grill in our kitchen so we can do it all year round if we want to. Not to forget the wonderful grill pan, you don’t get the same wonderful taste but it’s not far from it if you have a good pan! One of my favourite grilled foods (?) is vegetables, they develop a sweetness when they are grilled that I find hard to resist but why resist? I just follow the flow when it comes to vegetables…

GRILLED SWEET PEPPERS WITH ONION AND THYME or PEPERONI GRIGLIATI CON CIPOLLE E TIMO

Sweet peppers, I used a type called peperoni a corno that maybe is called horned peppers in English. Any other suggestions? If you can’t get those, buy long and thin ones.
Onions, the sweeter the better
Fresh thyme
Salt
Extra virgin olive oil

– Cut the onion into thin wedges and braise them in olive oil together with the thyme until they are transparent and a bit ‘caramelized’.
– Clean the peppers and cut them open lengthwise, empty them carefully of seeds and the white parts before filling the peppers with the braised onions.
– Grill the peppers on a grill, bbq or in a grill pan until they are soft and, obviously, grilled.
