Tomorrow’s the last day to send me your Heart of the Matter entries for this month, this month I have been a bit lazy with my entries despite the fact that we have been eating fish, I just forgot to take the photos all the time. Must be the heat. Anyway, today I’m posting my last and third entry for the HotM and it’s a sandwich with sardines. Sounds boring but it’s not actually. When I was a child I loved sardines but then they somehow slid into the background. Maybe because I wanted spicier food, maybe because I just forgot all about them. But now they are back with a revenge, first they are really heart healthy, small and full of Omega 3 and second they are really perfect for lunch. You can easily slip them onto a sandwich or on a plate together with vegetables or salad, they take well to being spiced up and most important, they taste great! If you have a fishy recipe or a recipe of something else, preferably animal, that swims in water, please send me your entry before the 23 of July at i_beretta AT yahoo DOT it.

SARDINE, RUCOLA AND SESAME SEED SANDWICH or PANINO CON LE SARDINE, RUCOLA E SEMI DI SESAMO

Bread, I used rye but feel free to use any type that you like
Sardines in olive oil
Red onion
Rucola, argula or rocket, choose the name that you use for it. Or use normal salad
Sesame seeds
Salt

- Toast the sesame seeds in a skillet without any fat.
- Put the rucola or any other type of salad you want to use on a slice of bread, put the sardines on top. Now I like to take out the spine but you don’t have to do that, it’s just a personal idiosyncrasy of mine.
- Slice the onion and put it top of the sardines, sprinkle some salt and sesame seeds ( not as many as I did in the photo, that’s a bit too much, they just slipped on by mistake) over it and eat!
