FRITTATA WITH BEANS, CHERRY TOMATOES AND CHILI PEPPER

This is one of those dishes that you eat when you need something filling, fast and comforting. A frittata always, well almost always, makes me feel better, it’s a bit like potatoes, and if you add beans and throw in some small sweet tomatoes and chili pepper you just can’t resist it. I think that chopped parsley or chives wouldn’t be a bad idea to add and some of you probably already have your own versions of this already. But if you never tried it, do!

FRITTATA WITH BEANS, CHERRY TOMATOES AND CHILI PEPPER
2 servings

4 eggs
1 large fistful of freshly grated parmesan cheese
100 g / 3 1/5 oz cooked beans
15-20 small sweet cherry tomatoes
Chili pepper (optional)
salt
extra-virgin olive oil

– Cut the tomatoes in two and sauté in olive oil with the chili pepper and the beans until they are getting soft.
– Whisk eggs and parmesan cheese together and pour it into the pan over the tomatoes and the beans.
– Cook on both sides until golden and serve either warm or cold.
