The Heart of the Matter #5 – Waterlife

So now when Joanna‘s roundup of HotM #4 has been up for a couple of days, here and here, it’s time for the announcement of July month’s round! But first I have to say that I am so happy that so many have discovered this event because it really helps us to fulfill its purpose, that of building up the HotM blog with a recipe base of heart healthy food where you can go to find recipes and inspiration! A heartfelt thanks (now, how could I resist a pun like that here?) to all of last rounds participants!

This month the theme is fish! But not only fish, anything that swims or just lives in the water is OK (well maybe not mermaids if you happen to find any, they are too beautiful and the same goes for sea horses, I have had a soft spot for those since I was little) which means that you can use lobsters, prawns, oysters, clams, eel, tuna in cans and roe, just to mention a few! You can boil or fry, make pasta dishes or salads, stews or finger food-there are no limits to what you can make as long as it is heart healthy. Fish is particularly good for the heart as it has Omega 3 oil and the fatter the fish the better they say so for once we are allowed to go for a fat product! Try to avoid using bad fats (like butter and trans fats) and too fat dairy products, serve it with a lot of vegetables that are in season (possibly) and you have a heart healthy meal on your table! It’s not difficult is it? So please help us to build up a heart healthy recipe base and participate in HotM #5, all you have to do is to send me the link to your entry at i_beretta AT yahoo DOT it before the 23 of July( the last day is the 22), make a link here or to the HotM blog if you prefer so that your readers get to know about the event and can see the roundup later! In order to keep this focused on heart health we ask you to consider this as a one entry event, i.e. we prefer that you don’t use your entry for other events as well. (But we are known to have made exceptions, see Lisa’s entry in the last roundup for example!)

So what is my first entry for this round? Well, just to show that you can submit other fishy things than pure fish, I’m presenting you with a white bean salad with bottarga or dried fish roe. A nice thing to eat for lunch on a hot day or a on a boring gloomy day when you need cheering up! I used tuna roe and I couldn’t resist to use some Umbrian fagioli del purgatorio that I had in store, who can resist beans with that name, purgatory beans?

WHITE BEAN SALAD WITH DRIED FISH ROE or FAGIOLI CON BOTTARGA

Cooked white beans
Onion, preferably mild
Grated fish roe
Parsley, chopped
Lemon juice, optional
Salt
Olive oil, extra virgin

– Slice the onion and mix it with the beans, add the chopped parsley and some grated fish roe, it’s best to add it a little at a time so that you get the right balance.
-Then add the oil and some lemon juice if you want, check the salt and serve!
