MOCK GASPACHO WITH BELL PEPPER, CUCUMBER AND FRESH GINGER WITH AVOCADO AND SMOKED PAPRIKA CREAM

When I was twelve I was offered a bowl of gaspacho by the mother of one of my best friends when we passed the kitchen after our usual horsey pursuits and since that day I tried for many years to recreate the bounty of that soup. I was struck by its taste and freshness and I even remember how the light fell into the kitchen, such was the impact of that moment. I have given up my tries and nowadays content myself with treasuring the memory of it. I still make mock gaspachos (I call them that because I’m well aware the seriousness of the Spanish Gaspacho and I don’t pretend to make a real one), usually on free hand and always with various results but I’m always happy to eat it. In this version I used very small and intensely sweet cherry tomatoes, some red bell pepper, cucumber and fresh ginger and it was delicious to eat after a hot morning on the run.

MOCK GASPACHO WITH BELL PEPPER, CUCUMBER AND FRESH GINGER WITH AVOCADO AND SMOKED PAPRIKA CREAM
2 servings

325 g/3 1/2 oz sweet tomatoes, the taste is important.
100 g/3 1/2 oz red bell pepper
75 g/2 5/8 oz peeled cucumber
Fresh ginger
Avocado
Lime juice
Smoked Spanish paprika or chili powder
Salt
Olive oil, extra virgin

– If you want the soup be really smooth you skin the tomatoes before putting them in the blender, I don’t because I like some texture. Put the tomatoes in a blender together with the bell pepper and cucumber, all cut into pieces. Run the blender until smooth.
– Add the finely chopped fresh ginger, some salt and run the blender for another 30 seconds.
– Put the soup in the fridgeto get cold and to de-bubble. The blender makes it full of air the soup assumes an ugly nuance of red(ish), it also gains more flavour if you leave it to rest for an hour or two.
– Mash the avocado and mix it with a little lime juice, salt and a little of smoked Spanish paprika.
– Add some good olive oil to the soup, put the soup in small bowl and top it with a dollop of avocado cream.
– Serve!
