BLACK SPAGHETTI NESTS WITH ZUCCHINI, SHRIMPS AND GINGER or NIDI DI SPAGHETTI NERI CON ZUCCHINE, GAMBERETTI E ZENZERO

Today I heard a tree fall somewhere in the woods when I was out walking the dog and I immediately came to think about that existential question we discussed in our teens: "If a tree falls in the woods but no one is there to hear it, does it make any noise?". Today I was there to hear it for the first time in my life, I often see fallen trees around here, especially after storms and such but today I felt privileged, I don't know why, it was as if I participated in something secret. On the whole it was a strange atmosphere and both me and my dog was on the alert all the time. It's strange how different the same place can feel, one day I walk there feeling secure and happy and next I can almost feel the hair on my arms standing up because of some unreasonable creeping fear. Sure, there are a lot of wild animals here, like boars, porcupines, dear, foxes and hedgehogs and one year there was even a pack of wolves moving around here but I can't believe that's what's causing my feelings of discomfort, I suppose it's just some kind of primordial fear moving somewhere deep inside.

After all this talking about fear, what else can I serve you than black spaghetti? I like to keep it simple and simpler than this is hardly possible. I'm into ginger again, it comes and goes in bouts, so today I felt like using some ginger instead of chili.

BLACK SPAGHETTI NESTS WITH ZUCCHINI, SHRIMPS AND GINGER or NIDI DI SPAGHETTI NERI CON ZUCCHINE, GAMBERETTI E ZENZERO

Black spaghetti, i.e. spaghetti coloured with calamari ink
Shrimps
Zucchini
Garlic, finely chopped
Fresh ginger, finely chopped
Salt
Olive oil, extra virgin

- While the water and then pasta is boiling you dice the zucchini and sauté it in olive oil together with chopped garlic and ginger until it's golden. Salt a bit as well.
- Sauté the shrimps with the zucchini for a minute or two (it depends on how big they are).
- Make nests on the plates with the freshly cooked spaghetti, put some of the shrimp and zucchini mix into each nest and top with freshly chopped ginger.
- Serve and enjoy!
