
First a short note to all of you who wants to be interviewed by me, I will need some time to think about the questions to put to you so please be patient, they will arrive! You have to consider that I so far have to invent
So after yesterday's outburst of information I feel a little reticent today. So let's wroom on to the food, the real reason to why I blog!

ZUCCHINI PARCELS WITH HERB INFUSED MOZZARELLA or INVOLTINI DI ZUCCHINE E MOZZARELLA MARINATA
Zucchini
Mozzarella, as fresh as possible
Herb salt or finely chopped fresh herbs and salt
Dried peperoncino or some other type of chili pepper
Lemon juice
Olive oil
- Mix a little lemon juice with the herb salt and the crumbled peperoncino and then add the oilve oil.
- Cut the mozzarella into cubes (2x2 cm/0.8x0.8 in) and put them in a small bowl together with the oil.
- Cut the zucchini into thin slices length wise and brush them lightly with a little of the oil.
- Grill/fry them on both sides (without adding any grease) in a grill pan, if you don't have one you can use a normal skillet or pan.
- When they have cooled down a little you put a mozzarella cube on each slice and roll it around the mozzarella.
- Fasten the slice with a tooth pick and serve!
