
Today it's Mother's Day and I have had to remind my dear children about it. I better clarify that I'm don't care much for Mother's Day, I don't even think I have any particular opinion about it which is quite strange actually so the fact that they have forgotten about it doesn't hurt my feelings at all. Fortunately. I intend to use this day as a means of making them do a lot of things, emotional black mail can be useful if you want to make people do things without too much discussion. I never said I was a good or nice mother did I? But then I think I will probably forget all about it the moment I have posted this and am off to do something else. So here I am virtually celebrating

SMALL APPLE AND LAVENDER TARTS (Gluten-free)
10 pieces
90 g /3 1/8 oz almonds
90 g /3 1/8 oz sugar, I used dark brown sugar
180 g / 6 3/8 oz rice flour
90 g /3 1/8 oz salted butter
2 apples
3 + 2 tblsp sugar
2 tsp chopped fresh and tender lavender leaves
- Peel and cut the apples into pieces and put them in a small pan together with 3 tblsp of sugar and a little water. Let it simmer until the apples have become mushy and nice.
- Put almonds, sugar and rice flour in a blender and run until they are as floury as possible.
- Add the butter and work it into a dough. Line the small tart forms with the dough.
- Pestle the chopped lavender leaves with 2 tblsp sugar until you have a beautiful green sugar that you add to the apples.
- Stir and then spoon the apple mix into the lined small tart forms and bake them in a pre-heated oven (175° C/ 347 °F) for 10-15 minutes, it depends on how thick the dough is.
