I forgot something very important yesterday, I forgot to say Thank You to all of you who helped me by voting for the DMBLGIT photo. Not good, not good at all but I hope you can forgive me. Not that I have any good excuse, it just slipped my mind but at least it slipped back after while. I so wish I was one of those naturally graceful persons who remembers to say thank you when it’s due and brings little presents when they are due. And not. They make me feel so socially clumsy but then I think what I think when I feel like a louse because of my shortcomings in keeping order in my house ” I have other qualities, they might be hidden but they are there somewhere inside ready to pop out when needed.” Just so that you know.

SHALLOW PUFF PASTRY PIE WITH ONIONS, TOMATOES AND OLIVES

Puff pastry
Small fat and flat onions
Small sweet tomatoes
Olive paste
Rosemary
Salt
Extra virgin olive oil

– Clean the onions and divide them in two before braising them slowly in some olive oil until soft.
– Roll out the puff pastry to the size and form you want, a good idea is to make several portion sized ones. Turn up or fold the edges all around.
– Spread out a thin layer of olive paste over the puff pastry, place the onions and the small tomatoes on top and then add a little fresh rosemary.
– Bake in a pre-heated oven (175° C/347°F) until golden and crisp.
